Gram’s Nutty Wild Rice

You guys, this is one of my favorite dishes my grandma makes!  She is an amazing cook and I was so excited to get the recipe and make it myself.  I could create a cook book with all the amazing dishes she’s prepared for us over the years!

wild rice
– 1 cup wild rice (dry)
– 5 1/2 cups chicken or veggie stalk
– 1 cup chopped pecans or hazelnuts (or both!)
– 1 cup golden raisins
– 4 fresh green onions
– 1/4 cup chopped mint leaves
– 1/4 cup olive oil
– 1/3 cup fresh squeezed orange juice
– 1 large orange – grated rind
